Anyone else still holding on to their new year resolution to eat healthier in 2016? Well, I’m desperately trying to stay strong. While I will treat myself every now and then, I want something sweet and healthy that I can make here in my kitchen.
So I decided on homemade all natural fruit snacks. They’re so good…and really easy to make however, a tad bit time consuming. They have to be cooked in the oven at 170°F for about 8-9 hours. It’s totally worth the time. There is nothing like real fruit snacks. The flavor is second to none. Here are my super complicated elaborate ingredients: strawberries, mango, and honey. That’s it…that’s all!
Heat oven to 170°F. Wash and chop your berries and mango. I had about 2 cups of strawberries and 1 cup of mango. My fruit wasn’t the ripest as you can see by the color of the mango. Please try to get the ripest fruit possible, it will determine how much honey you need in this recipe, and the consistency of the final product.
Next, add the fruit to the blender. Then, blend until everything is pureed. This is also where ripe fruit comes in handy. Ripened fruit has the moisture content required for breaking down the fruit during the blending process. Add honey to desired taste. Then, blend again.
Next, line your baking sheet with either a silicone baking sheet or parchment paper. Pour your fruit puree on to your baking sheet and smooth out evenly.
Place your prepared fruit puree in the heated oven and wait…and wait some more. The snacks are done once the middle is set and tacky, about 8-9 hours. I would suggest doing this first thing in the morning, on a weekend when you’re going to be home all day. Or maybe some stay at home moms could make this awesome treat for the kids as an after school snack.
Once done, cool completely. If using the silicone mat, peel the fruit snack off and cut into strips or squares. Place wax or parchment paper on the back to prevent them from sticking to each other. If your fruit snacks were baked on parchment paper use clean kitchen scissors, cut them into strips, and roll them up. Store in an airtight container for up to 1 week.
Ours didn’t last more than a day so we didn’t bother to prepare them for storage. Here’s the Hubs devouring his after work snack!
2 cups ripe strawberries (chopped)
1 cup of ripe mango (chopped)
Honey (to desired taste)
- Heat oven to 170°F. Line baking sheet with a silicone mat or parchment paper.
- Place fruit in blender or small food processor, puree until smooth.
- Add honey to desired sweetness. Blend again.
- Pour mixture onto prepared baking sheet, spread evenly.
- Place in warm oven on bottom rack for 8-9hrs.
- Done when the middle is set and tacky. Cool completely.
- Cut into strips, then roll…or squares for serving. Enjoy!
*Snacks may be stored in an airtight container for up to a week.
